Coconut and Walnut Baklava Cookies – Delicate and aromatic cookies, crunchy on the outside and soft on the inside, topped with melted dark chocolate and crushed walnuts.
Ingredients:
- 🍪 1 ¾ cups finely ground whole-grain biscuits (200 g)
- 🥚 2 egg whites
- 🍬 ¼ cup powdered sugar, 2 heaping tbsp (50 g)
- 🥥 1 cup shredded coconut (40 g)
- 🌰 ½ cup ground walnuts (100 g)
- 🍫 2.8 oz dark chocolate (80 g)
- 🛢️ 1 tbsp oil (for melting the chocolate)
Instructions:
🏷️ Preparing the cookies:
- Mix the ground biscuits with the egg whites, powdered sugar, shredded coconut, and ground walnuts until a homogeneous mixture forms.
- Shape small balls or discs and place them on a baking tray lined with parchment paper.
- Bake in a preheated oven at 355°F (180°C) for 8–10 minutes, until lightly golden.
- Allow the cookies to cool completely.
🏷️ Chocolate coating:
- Melt the dark chocolate together with the oil, using a double boiler or microwave.
- Dip the top of each cookie into the melted chocolate, then sprinkle with a little ground walnut.
- Let the chocolate set at room temperature.
